- 1/2 c. (1 stick) - Butter
- 1 (15-oz.) can - Cream of mushroom soup
- 2 large, beaten - Eggs
- 1 c. - Mayonnaise
- 2 c. - Shredded cheddar
- 3/4 c. - Freshly grated Parmesan
- 1 tbsp. - Dijon mustard
- to taste - Kosher salt
- to taste - Freshly ground black pepper
- 1 lb. - Frozen chopped broccoli, defrosted
- - Crushed RITZ Crackers
- - Freshly chopped parsley, for garnish
- Step 1 Fire up your oven to 350º and get a casserole dish ready with cooking spray. Melt the butter in a big saucepan. Add in soup, eggs, mayo, cheddar, Parmesan, and mustard. Season with salt and pepper.
- Step 2 Lay the broccoli on the bottom of your dish. Drench it with the saucepan mix and cover it all with crushed Ritz crackers.
- Step 3 Pop it in the oven until golden and bubbly, around 30 minutes.
- Step 4 Finish it off with some parsley on top before serving.
